Peppermint Pattie Whoopie Pies

Cool, minty, and perfectly chocolatey — these Peppermint Pattie Whoopie Pies are like a wintery hug in dessert form.

Prep: 10 minutes, Total: 40 minutes

Ingredients:

  • 3/4 cup semi-sweet chocolate chips

  • 1/4 cup butter

  • 1/2 cup sugar

  • 1 large egg

  • 3/4 cup all-purpose flour

  • 1/4 cup white or semi-sweet chocolate chips

  • 12 See’s Dark Peppermints

Instructions:

  1. Preheat oven to 375°F. Line a large sheet pan with parchment paper.

  2. Combine the chocolate chips and butter in a small microwave-safe bowl. Microwave bowl on high for 40-60 seconds, or until smooth, stirring occasionally.

  3. Transfer chocolate to the a stand mixer bowl and add the sugar and egg. Mix for 45 seconds, or until combined. Add in the flour and mix for 45 seconds, or just until the flour is incorporated.

  4. Using a 1 tbsp measuring spoon, drop 24 scoops of the batter 1 inch apart onto the lined pan.

  5. Bake 10-12 minutes, or just until the edges are set.

  6. Meanwhile, place white or semi-sweet chocolate chips into a microwave-safe bowl. Microwave, uncovered, on high for 30-60 seconds or until melted and smooth, stirring once halfway. Set aside

  7. Remove the sheet pan from oven. While still hot, carefully turn over half of the cookies using a small spatula. Top with a See’s Dark Peppermint, then place another cookie on top. Allow the candy to melt slightly and become soft, about 5 minutes, then carefully press down on the tops of the cookie sandwiches to push the melted candy to the edges. Drizzle the melted chocolate over the cookies.
