3 - 4 large Sweet Potatoes (approximately 4 cups mashed)
1/4 cup butter (1/2 stick)
1/2 tsp salt
1 orange (zest only 1/2 tsp)
Bake whole sweet potatoes in 350° oven until tender. Approximately 30-40 minutes.
When done, peel and put potatoes in bowl, add butter and mash with electric mixer or potato masher. Add salt and orange zest. Blend well.
Put mashed potatoes in a greased one quart casserole. Top with Scotch Kisses. Bake in 350° oven until warm and Scotch Kisses are golden brown. Serves 6 - 8.
