Pecan Buds Banana Coffee Cake

  • 1 Box Banana Flavor Cake Mix* (Plus ingredients listed on package to prepare cake)
  • 12 See’s Pecan Buds (custom mix #10) – chopped (approximately 1 cup) Prepare this and set aside.
    Streusel Topping:
  • 1/4 cup sugar
  • 1/4 cup flour
  • 2 T butter – melted
  • 6 See’s Pecan Buds – chopped
Mix sugar, flour and butter until it resembles coarse corn meal. Add chopped See’s Pecan Buds.
  1. Heat oven to 350° (325° for a glass pan). Grease bottom of 9" x 13" pan.
  2. Prepare cake mix according to package directions.
  3. Pour batter into prepared pan and top with chopped See’s Pecan Buds (custom mix #10). Run knife back and forth through batter several times.
  4. Sprinkle streusel topping on top and bake 30-35 minutes or until toothpick inserted in center comes out clean.
  5. Cool completely or serve warm.
Substitute with Yellow Cake Mix with the following direction: Use 1/2 cup water, 1/4 cup butter or margarine (softened), 3 eggs, 4 very ripe bananas, mashed (about 1 3/4 cups) and follow step 3.
