Peanut Crispies
- 1 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup soft butter or margarine
- 2 eggs
- 1 tsp vanilla
- 3 cups quick-cooking oatmeal
- 1 cup See's Peanut Brittle (crushed)
Sift flour with the baking soda and salt. Cream butter, sugar, eggs and vanilla until fluffy. Blend in flour mixture. Stir in oatmeal and Peanut Brittle. Divide dough in half. Shape each half into a 10" x 1 1/2" roll on wax paper. Wrap and place rolls in freezer for 3 hours. Cut in 1/8" to 1/4" slices. Bake on ungreased baking sheet at 350 degrees for 10-12 minutes. |
